Soupy Joe's Cafe

So today I totally felt the urge to make soup and listen to Motown (simultaneously of course), and not just any soup, my favorite soup of all time : french onion soup au gratin. While the soup is incredibly easy (basically chop up a ton of onions, add butter, salt & pepper to the bottom of a tall sauce pot - add the onions and simmer till soft, add your prefered choice of stock and water mixture and serve) it is also incredibly luxurious and tasty. It's a comfort food to me, but the best thing about onion soup is that it is equally at home on my table as it is in a four-star restaurant.
I know I haven't been posting for a long time, but I promise I will. Seriously it got out of hand...my bad.
